Burrata “Insieme” marries south and north
The new Burrata “Insieme” at Tony’s marries classic ingredients from the north of Italy — asparagus and radicchio — with southern Italy’s wonderful cheese burrata, imported from Puglia (the heel of Italy’s boot).
Burrata is similar to mozzarella in texture but in its center, the cheese is pure cream. When you slice into it, the cream oozes out in pure indulgence.
The kitchen at Tony’s finishes the dish with roasted walnuts and an egg-yolk sauce.
