The new seared Hudson River Valley foie gras with Sicilian blood orange reduction.

The key to the reduction, says Tony, is that he adds some of the orange zest, thus imparting a gentle bitter flavor to offset the sweetness and tartness of the citrus (which is flown in from Sicily).
